I have set up camp at -134 / -1563 on the Latest Version Server. So far I've just built a house, a chicken pen and a little mine hut at the back of the build. I've also started to work on a farm / dock area, as the house overlooks a small marsh and the ocean.
I picked the location based on it's proximity to several things:
"Unity Road / New Iron City" - Not explored Iron City yet properly, but it's on the to-do list.
"Unity Road Inn / Community Farm" - Not sure if that the right name, but a REALLY cool build.
Empty Castle Walls - Not sure if anyone is still working on this, but there is a nice square castle fortification quite close to the Inn. I thought it would be cool to contribute to that / work in surrounding area.
Protected yet dead Village - I found a village quite close by, it looked as if someone had gone through the effort of lighting up the area and giving it a fence to protect the NPCs, yet unfortunately there was no villagers to be seen.
Something I really like doing in single player is protecting villages and then expanding them into towns / cities. Would be cool to speak to a mod about bringing that village back to life. 
I also wanted to mention, that so far I'm really unable to go into the nether. Due to my location, if I enter a portal, I get TP'd back to base as I haven't passed the 15 hour mark. I think I was probably ready to go into the nether after 6 hours of gameplay, could have been sooner if I wasn't so unlucky at finding iron.
