We don't need to cover performance concerns with regard to iron availability. Iron golem farms were not disabled to improve performance, they were disabled to protect the market by ensuring the primary currency was not devalued.

In my opinion I think that if there were a bunch of iron golem farm running around the clock for example if someone made on in an area that was constantly being loaded in by players for example in zen then that would produce a significant amount of iron for no input aside from the original build which, as previously mentioned, you can follow some very helpful youtube tutorials if you are not as good at Redstone than others. If there was maybe just 1 iron farm that is allowed and everyone can come and take some iron from it and make any other iron golem farms an offence.
Piglins trading for iron you at least have to give them something in return. I think it is the same with wandering traders. You have to give them emeralds for iron and they never restock that trade so I don't think it is farmable well decently anyway as there is quite a lot of luck involved with even getting the iron trade.
I am sorry about the noise that withers make but I do give everyone a noise warning before I start spawning in countless withers...
